Asian Inspired Chive Pancakes
WHAT YOU’RE MAKING:
Savory chive pancakes are a simple and delicious addition to many meals. You will be fighting for the last flavorful pancake on the plate. They are quick to make and require only a few ingredients. Add the Asian inspired dipping sauce to take this over the top.
INGREDIENTS:
For the pancakes
1 cup all purpose flour
1/4 cup rice flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1 cup chives cut into 2 inch pieces *see Note at bottom of page
For the Dipping Sauce
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons water
2 tablespoons agave
1 teaspoon sambal oekeo (red chili sauce)
1 tablespoon toasted sesame seeds (optional but recommended)
METHOD:
Prepare your dipping sauce by mixing everything in a small bowl. Set aside while you make the pancakes.
Prepare your batter by incorporating the flours, salt and pepper to a bowl. Add the water and gently mix together until you get a loose pancake batter. Add in the chives and stir to coat. Heat your non-stick skillet on high heat and then turn the flame to medium. Add 2 heaping tablespoons of batter to your pan, spreading it to form a pancake. Allow to cook until it releases easily from the pan. Check the bottom to make sure it is a golden color and then flip your pancake to brown the other side. Continue until your batter is gone. If using the dipping sauce, you can tear off small pieces and dip in sauce and enjoy. You can also top these with some roasted vegetables or a salad for a complete meal. Makes about 6 pancakes.
NOTE: You can use any vegetable you desire for this dish. the addition of julienned carrots is lovely as are scallions.
