My plant-based journey started at age 13, but my eating habits changed with life’s adventures. I eventually decided to return to a plant-based lifestyle in my 50s because I wanted to get back to a more holistic, healthy and balanced diet. The benefits are a no brainer — from simply changing what you eat, you can drastically improve your gut health, immunity and reduce the risk of a number of ailments. I feel younger and more energized, and I never feel the need to count calories.

The biggest misconception about eating plant-based is that it’s not as tasty or satisfying, however my goal is to demystify that through simple recipes for restaurant-quality meals from the comfort of your own kitchen. I love challenging myself by recreating dishes enjoyed by different cultures but making them vegan-friendly and delicious. No meal subscriptions necessary!

In my cooking, I avoid incorporating oil, butter and processed foods to keep things simple as nature intended. I’ve discovered great alternatives in ingredients and cooking methods which I highlight in my recipes.

When I’m not dreaming up new recipes or growing fresh vegetables in my garden, you can find me with a microphone recording music — my second favorite passion project.
