Fluffy Banana Oat Pancakes

WHAT YOU’RE MAKING:

Banana oat pancakes can be fluffy and delicious with a little trick. I love these pancakes because they are refined sugar free, gluten free and utterly delicious.

INGREDIENTS:

  • 1 ripe banana

  • 1 cup rolled oats

  • 1/4 cup of plant milk (I like soy milk for this but any will do)

  • 1 tablespoon maple syrup

  • 2 tablespoon apple cider vinegar

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract

METHOD:

Put everything in a high-speed blender and blend until the oats are pulverized. Alternatively, you could first blend the oats to make it a four, but i like the texture of the whole oats bended with the other ingredients better.

Once blended, allow the mixture to sit for about 5 minutes. this will allow the vinegar to interact with the baking powder resulting in a higher, fluffier pancake. While the pancake batter is resting, heat up your griddle (350f) or non-stick pan (high). Once it is heated (if using a pan, lower heat to medium), use 1/4 cup of batter and place on griddle. Leave pancakes until you see some bubbles on the top, then flip and cook the other side.

Top with your favorite granola, fresh fruit and maple syrup. You can use my tempeh bacon alongside of this if you wish.

This makes 6 pancakes and serves 2.
