Sourdough Starter Banana Bread
WHAT YOU’RE MAKING:
Here’s my recipe for chunky banana bread using sourdough starter for a moist and delicious final result. As always, this recipe is oil-free and another option to put your bananas to use when they’re starting to go bad.
INGREDIENTS:
1 cup sourdough starter discard
3 ounces of apple sauce (or you could use 2 flax eggs)
2 ripe bananas
1/2 cup of brown sugar (or sugar of choice)
1 cup of flour (your choice; I use all-purpose)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 cup of pecans or walnuts chopped (optional)
Pinch of salt
METHOD:
Preheat your oven to 350°.
Mash your bananas but leave a few chunks in a bowl. Add your sourdough starter discard and apple sauce together, and stir to incorporate.
In a separate bowl, add all of the dry ingredients including the nuts if you’re using. Whisk everything together.
Combine your wet and dry ingredients together, and gently stir until you don’t see any dry flour in the batter.
Next, pour your batter into a parchment-lined loaf pan and cook for one hour. Remove from oven and place on a cooling rack. Once cooled, lift out of the loaf plan and gently remove the parchment paper.
