Mini Banana Chocolate Bites
WHAT YOU’RE MAKING:
Do you have a banana that’s getting too ripe on your countertop? Try these guilt-free mini banana chocolate bites for a yummy snack to satisfy your sweet tooth. With only three core ingredients, the end result is cake-like in texture with an optional chocolate drizzle.
CAKE INGREDIENTS:
1 ripe banana (serving size: 6 pieces)
1/3 cup of flour (your choice)
1 scant teaspoon of baking powder
Pinch of salt
OPTIONAL CHOCOLATE SAUCE INGREDIENTS:
2 teaspoons of cashew powder
1 1/2 teaspoons of cacao or cocoa powder
1 tablespoon of agave
Pinch of salt
METHOD:
First, mash your banana well in a mixing bowl. Combine salt and baking powder and mix into the banana. Start adding your four a little bit at a time and stir into the banana mixture until the consistency looks like a chunky pancake batter. It will have to be thick enough to scoop with a spoon onto parchment paper without running.
Note: I’ve only made these in my air fryer, but I imagine the texture would be the same in a convection oven at 350°.
On a parchment paper-lined air fryer tray, scoop a teaspoon of batter. Continue until you’ve scooped all of your batter. Air fry at 350° for 20 minutes until golden, and check to ensure they don’t get too brown. Take out and allow them to cool.
To make these mini banana bites even more decadent (and still low calorie), I love to make this delicious and easy chocolate sauce to drizzle over. Combine 2 teaspoons of cashew powder with water until you get a thin consistency. Now add 1 1/2 teaspoons of either cacao or cocoa powder (whichever you have in your pantry) with a tablespoon of agave and pinch of salt. Stir to combine. This should be thin enough to drizzle, but if it’s accidentally too thick, just add water. If it’s too thin, add more cashew powder. Once your mini banana cakes are cool, drizzle chocolate sauce to your liking.
